Creamy Mushroom Alfredo Pasta 🍝 Ingredients (Serves 2–3) * 180g dry pasta (fettuccine) * 300g mixed mushrooms (shiitake, oyster, cremini/brown mushrooms) * 2 tbsp butter (total) * 3 large cloves garlic, minced * ½ cup heavy cream * ¼ cup grated Parmesan cheese * 2 tbsp truffle goat cheese (optional) * ½ cup pasta water (reserved) * Salt and black pepper, to taste Instructions 1. Cook the pasta Bring a pot of salted water to a boil and cook pasta until al dente. Reserve about ½ cup of pasta water, then drain. 2. Cook the mushrooms In a large pan over medium-high heat, add 1/2 tbsp of butter, once that is melted add the mushrooms. Cook until they release all their water. 3. Add butter & garlic Add remaining butter to the pan, then stir in the minced garlic. Sauté for about 1 minute until fragrant. Season with salt and pepper. 4. Build the sauce Pour in the heavy cream and let it gently simmer. Stir in the Parmesan cheese and truffle goat cheese (if using) until melted and combined. 5. Emulsify Add about ½ cup of reserved pasta water and let the sauce simmer until slightly thickened. 6. Combine Add the cooked pasta back into the pan and toss until fully coated in the sauce. 7.
