On a rainy afternoon, while thinking of my sister Gail and searching for Italian comfort food ideas, I decided to fry up some golden, stuffed pasta. The savory aroma filled the kitchen and brought back happy memories of family pasta nights. This dish features golden, breaded ravioli stuffed with rich three-cheese, smothered in a hearty savory meat sauce, and topped with a luscious runny egg yolk and fresh herbs. It delivers a crispy, gooey, and mouthwatering flavor experience in every bite. I really enjoyed making this! GET YOUR COOK ON with NancyG! Written by NancyG, The Recipe Collector. Recipe Basics: Yield: 6 servings Measurements: USA standard (rounded up) Ingredients: 24 large three-cheese ravioli 2 cups all-purpose flour 3 eggs, beaten 3 cups Italian breadcrumbs 2 cups vegetable oil for frying 1 pound ground beef 2 cups marinara sauce 6 egg yolks 1/2 cup grated parmesan cheese 2 tablespoons fresh parsley, chopped Instructions: 1. Cook the three-cheese ravioli in boiling water for 3 minutes, then drain and let cool slightly. 2. Set up a breading station: flour in one bowl, beaten eggs in a second, and Italian breadcrumbs in a third. 3. Dredge each cooked ravioli first in flour, dip into the beaten eggs, and coat thoroughly with breadcrumbs. 4. Heat vegetable oil in a large skillet over medium-high heat. Fry breaded ravioli for 3 to 4 minutes until golden brown and crispy. Remove and drain on paper towels. 5. In a separate skillet, brown the ground beef over medium heat. Stir in the marinara sauce and simmer until hot and rich. 6. Arrange crispy fried ravioli on a serving plate, spoon warm meat sauce over and around them, and carefully place a fresh egg yolk on top. 7. Garnish with grated parmesan cheese and chopped fresh parsley before serving. Chef’s Notes by NancyG: For an extra touch, you can add a drizzle of garlic herb butter or pesto around the plate. You can also substitute ground Italian sausage for ground beef for a spicier sauce.
