While most places switched to electric, this spot still uses a giant charcoal oven to slow-cook their soups for 3+ hours. They use mangrove charcoal for that smoky aroma and high heat, which caramelizes the soup into a golden brown. The result is a rich, earthy flavour you can’t get anywhere else. Even the pork rib cartilage is soft enough to melt in your mouth! The pork trotter is glistening and packed with collagen. It literally falls off the bone. Also, the innards are prepared so well that even my grandma gobbled them up. It’s honestly so rare to find both of these specialties at one stall nowadays.
