Aircraft fly on pressure altitude height and use Radio Altimeters below 2500ft for actual ground clearance. Pressure altitude is relative to a standard atmosphere table. Curved or flat is no factor.

you set your altitude in relation to the ground and your aircraft keeps you there so it makes adjustments to maintain your hight if flying in a plan with enoth fule to go right arround the world back to its starting point and set you desired altitude the aircraft will maintain that hight all the way and you will never notice but it still went arround the glob

You don't have to adjust for curve, the centre of the earth is always directly beneath the aircraft so why would you need to adjust for curvature? It's the most basic misunderstanding that annoys me the most
