I need help and I hope that you see this I bought Eve at the end of March and she’s been healthy and thriving and I’ve made a ton of yummy delicious things with it but my sourdough is not coming out right. My house is at 74° all the time the crust of the bread is perfect, but the inside keeps coming out slightly gummy or doughy, I’m really trying not to get myself frustrated and I wanna keep trying to perfect it, but I can’t figure out what I’m doing wrong. I have followed all of your directions and I just don’t know what the next step is. Can you help me please?

Just want to say I love Eve! She is still thriving and I haven’t had one bad loaf yet ( knock on wood) . It’s been a win since the start! Which has been so nice. Started in winter and excited to continue as long as I can!
