nope, the restorers use a modern varnish that doesn't oxidize over time.... that why it's yellow, because the varnish used oxidizes al gives that yellow stain

The old varnish is often stained with nicotine. Also modern varnishes are literally designed to not stain.

no old varnish was different from modern varnish- which now gives a protective layer, brightens colors, can make it glossy or matte, and don’t oxidize.
