Recipe below - serves 4 adults or in our case 2 adults, 3 kids and a bub 1 tablespoon olive oil 500g lean beef mince 1 onion diced 2 tablespoon minced garlic 2 medium zucchini diced 1 teaspoon ground cumin 1 teaspoon ground oregano 1 400g tin of diced tomatoes 1 cup beef stock or bone broth Serve with rice, smooth feta (25g each serve) and chopped parsley Heat olive oil in a large pan and add onion and garlic Cook for 2-3mins until fragrant and soft Add beef and cook until browned Add zucchini, cumin, oregano and season with salt and pepper and stir Add tomatoes and beef stock and stir Gentle simmer for 10mins until sauce has thickened and zucchini is soft Serve over rice and top with feta and parsley Enjoy! I will give u a hint if u add 2 table spoon of tomato paste and extra water it turn to stew so good this way and anothere way making it with cooked yogurt instead of tomato you will love it
