We cooked Kangaroo Tapsilog for brekki 🇦🇺🤝🇵🇭 Ingredients * 400g kangaroo sizzle steak, thinly sliced against the grain * 100ml Filipino soy sauce * 100ml Filipino cane vinegar * 10 garlic cloves, thinly sliced * 1.5 tbsp sugar * 2 tsp baking soda * 1/2 tbsp cracked black pepper * 2/3 tsp Vegemite * Neutral oil, for cooking * 2 cups day-old jasmine rice * 2 tbsp garlic, finely chopped * 1 tsp Sri Lankan curry powder * Salt, to taste * 2 eggs * Filipino vinegar, to serve Method 1. Combine the kangaroo with soy sauce, vinegar, sliced garlic, sugar, black pepper, baking soda and Vegemite. Marinate in the fridge for at least 1 hour, or up to 4 hours. 2. For the garlic fried rice, heat a generous amount of oil in a pan. Add the chopped garlic and fry until golden and crisp. Add the rice, season with salt and curry powder, and stir-fry over high heat until well combined and fragrant. Set aside. 3. Heat a little oil in a pan over high heat. Remove the kangaroo from the marinade and sear for around 1 minute per side until caramelised and just cooked through. Avoid overcooking. 4. Fry the eggs sunny-side up. 5. Serve the kangaroo tapa with the garlic fried rice and fried egg, with Filipino vinegar on the side. #FoodTok #nipcooks #abimarquez #breakfast
