And right in the middle, the spine of it all: cornmeal cooked slow, stirred with patience until it turns dense and golden, layered with salty sheep cheese that bites back just enough. Nothing here is accidental. Those pickled green tomatoes? Harvested before their time, drowned in brine with dill, garlic, and peppercorns, left to sharpen into something that cuts through fat like a blade. The grilled minced meat rolls are not just meat, they are a ritual, a mix of beef, pork, garlic, baking soda, and bone broth, worked by hand until elastic, then thrown on open fire where smoke does half the cooking.
