@harka_cooks: Meatball Pasta with Kale Pesto 🥩🍝 Juicy golden pork meatballs tossed with silky kale pesto, butter, and al dente orecchiette… finished with sharp pecorino and crispy kale on top. • 2 tbsp extra virgin olive oil • 200g pork mince (salt, pepper, paprika) • 1 tsp fresh chilli paste • 1 tbsp brown onion (finely diced) • ½ tbsp garlic (minced) • 3–4 kale leaves • 1–2 tbsp butter • 130g orecchiette • Parmesan & pecorino cheese • Pasta water • Salt & pepper 1. Roll and sear meatballs until golden. Set aside. 2. In the same pan, sauté chilli paste, onion & garlic until fragrant. 3. Add kale, cook down, then deglaze with white wine or water. 4. Blend into a smooth kale paste with a splash of pasta water. 5. Melt butter, add kale paste, pasta & meatballs. Toss with pasta water until glossy. 6. Off heat, add parmesan and adjust consistency. 7. Finish with pecorino & crispy fried kale. #meatballs #kale #pesto #pasta #homecooking
