@helentaylorrr: but if you toast it, that’s criminal :( you’ll need: - 3 eggs - 1/2 red onion, finely chopped - 1tbsp curry powder - 1tbsp mango chutney - a handful of fresh coriander, finely chopped (stalks is fine too) - 2tbsp mayonnaise - 1tbsp greek yogurt - sea salt & pepper to taste (to serve): - fresh bread - fresh tomato - sea salt - extra virgin olive oil method: 1. begin by placing the eggs in a small saucepan and fill up with cold water until the eggs are fully submerged. 2. place on a high heat until boiling. as soon as the water is boiling, set the timer for 8 minutes and lower the heat so the eggs are just simmering. 3. meanwhile, finely chop the red onion and fresh coriander in preparation. 4. once the eggs have boiled, drain the water and fill the pan back up with ice cold water. leave for a couple minutes before peeling away the shell. 5. in a medium sized bowl, roughly mash the eggs using a fork (leave some texture though!). 6. add in the curry powder, mango chutney, red onion, fresh coriander, mayonnaise, greek yogurt and salt & pepper. 7. mix until thoroughly combined. 8. top a fresh slice of bread with a generous amount of the egg mix. 9. finish with sliced tomato, a drizzle of olive oil and a sprinkle of extra sea salt… enjoy xxx🥚 #eggs #lunchideas #lunch #yogurt #egg
