I always use the recipe by Here’s Your Bite @Here’s Your Bite 🙌🏾✨ Ingredients For the Soup: * 1/2 yellow onion, diced (about 1 cup) * 6–8 cloves garlic, minced * 1/2 lb hot or mild Italian sausage * 1/2 lb lean ground beef * 2 tbsp tomato paste * Salt and pepper, to taste * 1–2 tsp Tony’s Seasoning, to taste * 1 tsp dried basil * 1 tsp dried parsley * 1 tsp dried oregano * 1 tsp Italian seasoning * 1/2 tsp red pepper flakes (to taste) * 24 oz marinara sauce * 1/2 cup heavy cream * 4–6 cups chicken stock * 1/2 lb lasagna noodles, broken into pieces * Handful of fresh basil * Olive oil For the Ricotta Cheese Topping: * 1 cup grated Parmesan cheese * 1 cup ricotta cheese * 1 cup shredded mozzarella cheese * 1/4 cup fresh parsley, chopped * Salt and pepper, to taste Instructions 1. In a medium bowl, combine Parmesan, ricotta, mozzarella, fresh parsley, salt, and pepper. Mix well and set aside. 2. In a large soup pot or Dutch oven, heat olive oil over medium heat. Add diced onion and a pinch of salt. Cook for about 4 minutes. Add minced garlic and cook until fragrant, about 30 seconds. 3. Add Italian sausage and ground beef, breaking the meat into smaller pieces with a wooden spoon. Cook for a few minutes, then season with salt, pepper, dried basil, oregano, parsley, Italian seasoning, red pepper flakes, and Tony’s Seasoning. Continue cooking until the meat is no longer pink. 4. Add tomato paste and stir. Cook for about 2 minutes. Pour in chicken stock and marinara sauce. Stir everything together and bring to a boil. 5. Add broken lasagna noodle pieces to the pot. Reduce heat and simmer for approximately 10 minutes, or until noodles are al dente, stirring occasionally. 6. Once the noodles are cooked, stir in the heavy cream and freshly torn basil. Taste and adjust seasonings as needed. 7. Ladle the soup into bowls and top each serving with a generous dollop of the ricotta cheese mixture. Enjoy! ❤️ Tip: If the soup becomes too thick, add a little extra chicken stock until you reach your desired consistency.
