In a skillet melt 1tbsp butter and 2tbsp oil, then add 3tbsp flour and whisk together. Whisk in 4tbsp chili powder, 2tsp onion powder, garlic powder, cumin, Mexican oregano and salt. Then add in 1 cup of chicken broth and whisk in, and add in 2 more cups and whisk until it’s thickened, add 2 tbsp tomato paste and simmer for a few minutes. Taste for seasonings. Add a bit to a 9x13 pan Fill the tortillas with cheese and chicken if desired. Pour the remaining sauce over everything and top with more cheese.
