Air fry for 20 minutes at 200 degrees celsius. Shake throughout. 💕Next, make the pico de gallo by mixing ½ the red onion, tomato, coriander and 2 tbsp lime juice together, set to one side.  💕Afterward, make the chipotle sauce, by combining the mayo, chipotle paste and a ½ tbsp lime juice together. Set to one side.  💕Add a pan to medium heat. Add the beef mince frying for 4-5 minutes until almost browned, then add the other ½ onion for a couple of minutes until soft and the beef has cooked.  💕Season with the taco seasoning and add in the nacho dip and water. Stir to combine and leave to thicken for a minute.  💕Top the cooked chips with the beef mince and grated mozzarella. Pop under the grill for a couple of minutes until the cheese has melted.  💕Drizzle over the chipotle sauce made earlier and add the pico de gallo on top before serving.
