Copycat Olive Garden Zuppa Toscana I love a simple recipe you can make on the stovetop or in the crockpot. This is a cozy, easy family dinner that tastes just like the restaurant. 🤍 Ingredients 1 medium onion, chopped 4 large russet potatoes, sliced or diced 1 lb mild Italian sausage 2 cups chicken broth 2 cups water 2 tbsp minced garlic 2 tsp Italian seasoning  1 tsp salt ½ tsp each black pepper and onion powder  ½ cup heavy whipping cream 2 cups chopped kale Crushed red pepper, to taste Parmesan cheese, for topping Stovetop Directions 1. Chop the onion and dice the potatoes. 2. In a large pot or Dutch oven, heat a drizzle of oil over medium heat. 3. Add the chopped onion and cook for 2–3 minutes until softened. 4. Add the Italian sausage and minced garlic. 5. Add the potatoes, chicken broth, water, Italian seasoning, onion powder, salt, and pepper.  6. Bring to a boil, then reduce heat and simmer for about 20–25 minutes, or until the potatoes are tender. 7. Stir in the kale and heavy cream. Cook for another 3–5 minutes until the kale is wilted. Add more salt and pepper to taste.  Crockpot Directions 1. In a skillet over medium heat, cook the sausage with the chopped onion and minced garlic until browned. Drain excess grease if needed. 2. Add the cooked sausage mixture to the crockpot. 3. Add the potatoes, chicken broth, water, Italian seasoning, onion powder, salt, and pepper. (Add more chicken broth if the potatoes aren’t fully covered.) 4. Cover and cook:     LOW for 5–6 hours, or     HIGH for 3–4 hours, until potatoes are tender.  5.
