One brother manages the farm and the health of the 4,000 cattle, while the other, Ryo-san (@butcher_ryo), heads up the butchery and the restaurant here in Tokyo. Because they manage the cattle’s diet so strictly (using local rice and fresh mountain water), the beef has an incredible balance of red meat and fat. 😮💨 It’s rich in flavor but surprisingly light, you won't leave feeling a "meat coma." 😎 What to order: • 2LB (900g) Mogami Wagyu Sirloin (¥28,000) – Hand-cut fresh to order by Ryo-san. • Pro Tip: Order a side of fluffy white rice and a raw egg yolk. Dipping the grilled steak into the yolk over the rice is the ultimate way to eat it!
