Meatballs Vermicelli Soup 🍲 I can’t help myself with soup content! Once it dips below 65°F, that’s my sign it’s soup season 🤣 This meatball vermicelli soup is full of flavor from fresh tomatoes, herbs, and a sprinkle of crumbled Parmesan. I hope you love it as much as I did 🤍 let me know if you try it! Ingredients For meatballs: 1 lb ground beef 1 tbsp garlic powder ½ tbsp onion powder 1 tbsp dried oregano ½ tbsp paprika 1 tsp salt 1 tbsp black pepper For soup base: 3 large tomatoes (tops cut off) 1 medium onion, diced 4 garlic cloves, minced 3 tbsp olive oil (2 tbsp for tomatoes, 1 tbsp for meatballs) 1 ½ tbsp tomato paste 3 cups beef broth 1 cup water 1 ½ cups vermicelli pasta ⅛ cup cilantro, chopped ½ cup Parmesan cheese Spices for sauce: ½ tbsp paprika (add more for extra heat) 1 tbsp Italian seasoning ½ tsp red pepper flakes ½ tbsp oregano Salt & black pepper, to taste Instructions 1. Cook the tomatoes - Place tomatoes cut-side down in a deep pan with 2 tbsp olive oil. - Add onion and garlic on top, cover with lid, and cook on medium-low for ~10 minutes, until skins loosen. Remove skins and mash tomatoes into a sauce. 2. Make the meatballs - In a bowl, season ground beef with garlic powder, onion powder, oregano, paprika, salt, and black pepper. - Roll into mini meatballs (~1 inch). - In a second pan, heat 1 tbsp olive oil and brown meatballs until cooked through. Set aside. 3. Build the soup base - To the tomato sauce, stir in tomato paste and all sauce spices. Cook 1 minute on medium-high. - Add broth and water, bring to a simmer. - Stir in vermicelli, cover, and cook 4–5 minutes, until tender. Finish the soup Add in the meatballs, cilantro, and Parmesan.
