@alexskitchenbangers: Hot Honey Mexicana Cheese Burrito Bowl The dinner we’ve been eating on repeat lately. Quick, filling and genuinely so good 🤌🏼It’s got smoky taco spiced beef, Mexicana cheese melted with a drizzle of hot honey, Mexican style rice, fresh toppings and a dollop of nacho cheese dip. Takes less than 15 minutes, high in protein and so easy to throw together after work. Save for your next easy dinner 📌 Ingredients (serves 2): 250g lean beef mince  1 tbsp taco seasoning  1 tsp smoked paprika  25g honey  1 tbsp hot sauce  Pinch of chilli flakes  40g mexicana cheese grated  1 x 250g microwave mexican flavoured rice  ½ small red onion sliced (I used leftover pickled ones, mix red onion in a bowl/jar with equal parts distilled vinegar & warm water with a pinch of salt)  40g sweetcorn  8 cherry tomatoes quartered  100g shredded lettuce  20g nacho cheese dip  We always have 25g tortilla chips on side - extra 61 calories each  💕 Fry off the beef until browned. 💕 Mix together the honey, hot sauce and chilli flakes. 💕 Once browned, sprinkle over the taco seasoning and smoked paprika and pour in 50ml water. Stir well and let it simmer for a couple of minutes until the sauce thickens and coats the beef. 💕Pour in 1 & 1/2 tsp of the hot honey tossing to combine and reserving the rest for later. 💕Sprinkle over the Mexicana cheese, cover with a lid and leave for a minute until melted. 💕Meanwhile, heat the rice according to packet instructions and prepare your salad ingredients. 💕To serve, divide the rice between bowls, then top with the cheesy beef, sweetcorn, tomatoes, onion and lettuce. 💕Finish with a small drizzle of nacho cheese dip over the top.
