🔸Ingredients:⬇️2 U-dong Noodles
0.3 lbs Guanciale
4 Egg Yolk
1 cup Parmesan Cheese
2 tbsp Miso Paste
Salt
1tbsp Black Pepper Corn
1tbsp Sichuan Peppercorns
Water
🔸Directions:⬇️1. Start by adding black peppercorns to a pan and heating them gently. Stir and spread them with a spoon as they toast. Once fragrant, transfer them to a mortar or spice bowl, add Sichuan peppercorns, and crush the mixture well. Set aside.
2. In a heated pan, cook the guanciale until fully rendered and crisp. Remove and set aside, reserving the rendered fat separately for later use.
3. Bring a pot of water to a boil and cook the udon noodles until tender. Drain and set aside.
4. In a separate bowl, combine egg yolks, grated Parmesan cheese, the crushed peppercorn mix, miso paste, and a bit of the reserved guanciale fat. Stir until smooth and well blended.
5. Add the hot noodles to the bowl along with the cooked guanciale. Toss everything together until the noodles are evenly coated and the sauce becomes creamy.
6. Plate the noodles, spoon over any remaining sauce, and finish with extra grated Parmesan. Garnish with cilantro if desired, then serve and enjoy.
