We also know at least in the case of the pyramids at Giza there was writing on the exterior of the outer casing stones. We know this due to many writers between 400 BC to 1300 AD. To what extent were they covered we don't know, but at some point visitors started leaving graffiti on the blocks as well. It's unfortunate the blocks were removed and only a handful can be found now.
