For anyone curious, the freezing turns the water inside into ice making lots of tiny holes. Then when it melts and drained you remove the water but the holes remain. Helping it get that crispy texture when cooked.

Squeeze out the water, soak in broth of your choice. ex: dashi, chicken or vegetable broth with some aromatics. coats in cornstarch and shallow fry. Toss in your sauce of choice and it's amazing!

Freeze and thaw the tofu multiple times. Squeezing out water between cycles. Forgive my basic understanding of the science but it's something to the effect of the water expanding as it freezes stretches the proteins making for a (in lack of better word) meatier texture.

I used to do the freeze tofu and press it method but i stopped when i tried the boil and then squeeze once method and the texture is better and its soo fast and easy.

I like doing this and then putting them on rice with cucumber, edamame beans, steamed spinach (or whatever veggies I have) and then like teriyaki or sweet chili or hot honey on top.

the ninja crispi doesn't have temperature settings! it only has like bake, air fry, etc which from my research seems to just be the same as temps with bake being 350 ish and air fry being 400
