Ingredients: - 1/4 cup mochiko rice flour - 2 tbsp sugar - 1/4 cup water - cornstarch - 1 banana Vanilla cream (Optional): - heavy cream - vanilla -mascarpone cheese (optional) - powdered sugar Mix together mochiko, sugar, and water, then microwave for 30 second intervals, mixing in between. Do this until the dough forms (it will be super sticky and stretchy), for a total of 2-3 minutes. Roll out dough over a cornstarch floured surface, then cut into 2 pieces. Peel your banana and cut into two pieces, then wrap the mochi around and pinch closed. If making cream, whip the cream with vanilla and a tablespoon of sugar, and 2 tablespoons of mascarpone cheese if using. Pipe onto the banana before wrapping with mochi.
