Stir occasionally until the chicken is fully cooked and lightly browned around the edges, about 8–10 minutes. In the same pan, add a bit more oil if needed, add the sliced onion and peppers, season lightly with salt, pepper, garlic powder and cook while stirring occasionally until softened but still slightly crisp, about 6–8 minutes. Remove from the pan and set aside. Warm the tortillas in the microwave until soft and pliable,  keep covered to stay warm. Place a tortilla on a plate and spread a spoonful of sauce in the centre.Add a layer of cheese, then the cooked vegetables,chicken and some fries. Sprinkle over chopped cilantro and drizzle with more sauce if desired.  Fold in the sides of the tortilla and roll it up tightly.
