Orange hotate (scallop) is the rare “Red Jade” (Akadama) variety. Normal hotate: white (mostly males or non-breeding females). Orange/Red Jade: appears in roughly 1 in 1,000 scallops. It accumulates orange pigments from specific plankton it eats (chitin-rich). The owner called it rare because it is. It is considered higher quality with richer taste.
