This shop serves chicken chintan ramen, chicken paitan ramen, kombu-water tsukemen, and kashiwa rice. This is the special chicken paitan ramen. There are two paitan options: uma-amami and soy sauce. This time, we ordered the uma-amami version. The soup is a rich chicken paitan made by slowly cooking fresh chicken bones and chicken feet. By concentrating the chicken flavor over high heat, it has a thick, smooth, and creamy texture. A slightly sweet special tare adds depth, bringing out rich chicken flavor and mild sweetness. The noodles are thin and straight, with a smooth texture that pairs well with the thick soup. Toppings include chicken chashu, pork chashu, seasoned egg, red onion, onion, and kaiware sprouts. The two kinds of chashu, egg, and onion texture add nice contrast. It is also easy to access, just a 3-minute walk from JR Hino Station.
