They’re incredibly fluffy, soft, and literally melt in your mouth, with that perfect balance of zesty lemon, delicate poppy seeds, and creamy filling that makes every bite irresistible.✨ 🍋 LEMON POPPY SEED CUPCAKES Ingredients: * 240 g all-purpose flour (sifted) * 1 tbsp baking powder * ½ tsp salt * 1 tsp cornstarch * 100 g granulated sugar * 80 g brown sugar * ½ cup unsalted butter (room temperature or melted) * ⅓ cup oil (80 ml) * 2 eggs + 1 egg white * 1 tsp vanilla extract * ⅓ cup milk (80 ml) * ¼ cup Greek yogurt (65 g) * Zest of 2 lemons * 3–4 tbsp fresh lemon juice * 1–1½ tbsp poppy seeds Instructions: 1. Cool completely. 🍋 LEMON CREAM CHEESE FROSTING Ingredients: * 226 g cream cheese (1 block) * 60 g unsalted butter * 120–150 g powdered sugar * Zest of 1 lemon * 1–2 tbsp lemon juice * ½ tsp vanilla (optional) * Pinch of salt Instructions: 1. Beat butter until smooth. 2. Add cream cheese and mix just until combined. 3. Add powdered sugar gradually. 4. Mix in lemon zest and vanilla. 5. Add lemon juice little by little at the end. 6.
