Perfect for a summer dinner *Ingredients for 4 servings:* - 11 oz mezze maniche pasta (320 g) - 14 oz swordfish (400 g) - 21 oz cherry tomatoes (600 g) - 3.5 oz pitted Taggiasca olives (100 g) - A handful of capers - Oregano, to taste - Salt, to taste - Pepper, to taste - Extra virgin olive oil (EVOO), to taste *Instructions:* 1. Remove the skin from the swordfish and clean the fillet thoroughly. Cut the cherry tomatoes in half. 2. In a large pan, heat some EVOO with two cloves of garlic and fresh oregano. Once the garlic is golden, add the cherry tomatoes, season with a pinch of salt, and cook over high heat for a couple of minutes. 3. Add the swordfish fillets to the pan and cook for a couple of minutes on each side. Then, break the fillets into smaller pieces using a wooden spoon. Add the olives, capers, and dried oregano. 4. Meanwhile, cook the pasta in boiling salted water until al dente. Drain the pasta and add it directly to the sauce. 5. Toss the pasta with a drizzle of EVOO, plate, and serve.
