The hype around spinach being a “nutrient powerhouse” is by looking at it through the lens of nutrient density per calorie. But in terms of *booavailable* nutrient density per calorie, it’s pretty poor, really. Arugula and bok choy don’t have the oxalate problem, so they’re actually a much better choice than spinach

Even after maximizing oxalate loss through boiling the total oxalate content is still high (between 309–460 mg per 100g). For comparison, a low-oxalate diet often limits intake to just 50–100 mg per day. Some people are genetically predisposed to absorb up to 50% more oxalate than others, meaning even reduced levels in boiled spinach can still trigger stone formation. Half a cup of cooked spinach can actually contain more oxalates (roughly 755 mg) than a cup of raw spinach because the leaves shrink, concentrating the remaining minerals.
