Episode 2: Broke but Bougie, French onion Mac n Cheese (recipe below) Ingredients -4 to 5 strips of bacon (cook until browned & crispy) -2 tbsp fresh parsley, finely chopped -1 & 1/2 large yellow onion, thinly sliced -2 tbsp olive oil -2 tbsp unsalted butter -4 cloves of garlic, minced -2 cups dry ditalini pasta -3 cups beef stock -1/2 cup heavy cream -1/4 white wine -6 to 8 oz shredded sharp cheddar cheese -6 to 8 oz shredded gruyere cheese -salt & pepper to taste Method 1. Add olive oil to a large pan over medium-high heat. Then add the thinly sliced onions and sauté for about 2-3 minutes. Sprinkle lightly with salt, then turn the heat to medium-low and continue stirring occasionally for 15 to 20 minutes. Once the onions start to turn golden brown, add in the white wine to deglaze. 2. The onions are now caramelized to a deep golden-brown color, add the butter and garlic to the pan and sauté for about 2 minutes. Then add in the ditalini pasta and beef stock. Increase the heat and bring to a soft boil. Once boiled, reduce the heat to a gentle simmer and cover the pan with a lid. Cook for about 10 minutes. 3. Remove the lid and stir the pasta. Most of the stock should have absorbed by now leaving a small amount left. Add in the heavy cream and pepper. 4. Then add the sharp cheddar and gruyere cheese and stir gently until completely, smooth and creamy. 5. Turn the heat off and remove pan from oven. Plate the pasta into a bowl, scatter with crispy bacon, parsley, additional pepper, and enjoy warm. #DinnerIdeas #EasyRecipe #fallvibes #healthy #family
