![CAKE RUSK RECIPE: Eggs: 3 Sugar: 125g (1/2 cup+2 tablespoons) Oil: 125g ( 3/4 cup) All purpose flour: 125g ( 1 cup) Baking powder: 1 teaspoon Lemon juice : 1 teaspoon Vanilla essence : 1 teaspoon Salt: 1/4 teaspoon Instructions: 1. Preheat your oven to 160°C .Grease and line a loaf pan or square baking pan. 2. In a blender jug, add the eggs and sugar , oil, vanilla essence and lemon juice and blend together until light and pale. 3. Take out the mixture in a bowl. 4. Sift together flour and baking powder and salt, then gently fold into the egg mixture to form a smooth batter. 5. Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. 6. Allow the cake to cool completely, preferably overnight in fridge or keep for an hour in freezer, then cut it into slices. 7. Arrange the slices on a baking tray and bake again at 100-120 C for 15–20 minutes, flipping halfway, until they turn golden and crisp. 8.
