@hamishcookstuff: Tiramisu 🇮🇹 Ingredients 400g savoiardi (ladyfinger biscuits) 4 large egg yolks 100g (1/2 cup) sugar 500g mascarpone, cold 240ml (1 cup) strong espresso, cooled 2 tbsp coffee liqueur (optional) 300ml thickened cream, cold 2 tbsp cocoa powder, for dusting Steps 1. Brew espresso and let it cool completely. Mix with coffee liqueur if using. 2. In a bowl, whisk egg yolks and sugar over a double boiler (or very gently over simmering water) for 4–5 minutes until thick, pale, and slightly fluffy. Remove and cool slightly. 3. Add cold mascarpone to the yolk mixture and fold gently until smooth and thick. Do not overmix. 4. In a separate bowl, whip cold cream to soft-medium peaks. 5. Gently fold whipped cream into the mascarpone mixture in 2–3 additions until smooth and airy. 6. Quickly dip each ladyfinger into the coffee mixture for 1–2 seconds (do not soak). 7. Arrange a tight layer of soaked ladyfingers in a dish. 8. Spread half of the mascarpone cream evenly over the top. 9. Repeat with another layer of dipped ladyfingers. 10. Spread remaining cream on top and smooth the surface. 11. Cover and refrigerate at least 6 hours, preferably overnight, to fully set. 12.
