Cheesy BBQ Chicken Rice 🧀🍗 . Recipe below ⬇️ . Episode 3 of What’s for Dinner takes me right back 🥹 I first made this recipe during lockdown when I’d only just started Dinner at Hols, and it’s been on rotation in our house ever since. . The kids absolutely love it, and it’s one of those dinners I know I can put on the table and everyone will be happy. Smoky BBQ chicken, fluffy rice and loads of melted cheese, all cooked together in one pan 🙌🏼 . Serves 4 . Ingredients . 500g chicken breast, diced 1 tsp smoked paprika 1 tsp garlic granules 1 tsp dried oregano 1 onion, diced 2 peppers, diced 2 garlic cloves, grated 1 tbsp tomato purée 4 tbsp BBQ sauce, plus extra to serve 400ml chicken stock 500g cooked basmati rice - I used microwave pouches 120g cheese - I used a four cheese blend Fresh parsley, to garnish (optional) . Method Add the chicken to a large pan with the smoked paprika, garlic granules and oregano. Cook for a minute or so until the chicken is starting to brown. Add the onion and peppers and cook for a few minutes until softened. Add the garlic, tomato purée and 4 tbsp BBQ sauce. Mix well and cook for another minute. Pour in the chicken stock and give everything a good stir. Add the cooked basmati rice, mix everything together and simmer for a few minutes until the rice is piping hot and most of the liquid has been absorbed. Sprinkle over the cheese, pop the lid on and leave for a couple of minutes until the cheese has completely melted. Finish with fresh parsley and an extra drizzle of BBQ sauce. .
