Butter Braised Endive - Another Day In Paradise Ingredients 4 Belgian Endive Halved 2 tbsp butter 2-4 garlic cloves thinly sliced 1/2 cup white wine or stock 1 tbsp white wine vinegar 1 1/2 tsp sugar or honey 1/2 lemon juice Chives thinly sliced 2 tbsp goats curd or seasoned yogurt Lightly sear the endive in a generous amount of butter on medium heat. After about 2-3 minutes season with salt and add wine or stock - cover with a lid. Simmer on low until the wine is evaporated (about 10 mins) Remove the lid and add the garlic, a splash of vinegar and some sugar. This balances the bitterness of the endive. Cook for a few more minutes. Remove the endive from the pan and add some lemon, a little water, white miso, and vinegar. Mix until combined. I had mine with chives and a dollop of goats curd.
