I don't even use hand brake in these scenarios. Find the clutch bite point while holding the brake pedal, then transition to the gas pedal before letting the clutch out any further.

I spent the first 2 years of driving going out my way to avoid 2 junctions that are hill starts. one is leading on to a very busy roundabout so you have to be quick otherwise you wait ages for a gap, another is just really steep and even now 20 years later I hate coming out of that one!
