When you trim it right you’re not just prepping it to cook, you’re pulling off 5–7 lbs of clean trim that’s perfect for grinding, so now instead of buying ground beef you’re making your own from brisket. You control the fat, no random blends, and fresh ground is just better texture and flavor. So for less money per pound you’re getting a full brisket and better burgers at the same time, that’s the whole point of using the whole cut. #brisket #burgers #bbq #grilling #butchery

and the flavor from ground brisket is so much better than what you get from ground beef you get from the store. I like to grind mine pretty chunky for a little more texture in my burgers too
