ABLO ou encore ABOLO 🇹🇬🇧🇯🇨🇮 Une recette moelleuse, légèrement fermentée et cuite à la vapeur. Ingrédients (version que j’ai réalisée) : • 200 g de riz cru • 170 g de farine de maïs blanc • 10 g de maïzena • 50 g de riz prélevés pour la bouillie • 300 ml d’eau environ (à ajuster selon la texture) • 2 à 3 g de levure boulangère sèche (optionnel) • 20 g de sucre • 2 g de sel Préparation : 1. Faire tremper le riz plusieurs heures. 2. Prélever 50 g pour préparer une bouillie. 3. Mixer le reste du riz avec un peu d’eau. 4. Ajouter la farine de maïs, la maïzena, la levure boulangère, le sucre, le sel et la bouillie tiédie. 5. Laisser fermenter toute la nuit. 6. Cuire à la vapeur jusqu’à obtenir des ablos bien gonflés et moelleux. La pâte doit être fluide mais légèrement épaisse. VERSION EXPRESS : Pour une version plus rapide et plus aérienne : • 200 g de riz • 170 g de farine de maïs blanc • 30 à 40 g de maïzena • 5 g de levure boulangère sèche • 300 ml d’eau environ Temps de fermentation : 1h30 à 3h seulement.
