You don't need to be global to do this. You could do this in any small farming town that grows wheat and has chickens, you just might have different pickles and sauce. Really chicken is pretty optional, there is comparable poultry options basically anywhere.

Most established towns around the world throughout history would have sources of salt, poultry (eggs for mayo, chicken for chicken), grain for bread and breading, cows for fat (mayo and frying). Yes today it's cheaper and easier than ever, but you don't need global trade and $1500, you just need a community
