@doughandfire: How to make a Neapolitan style pizza using a poolish pre-ferment. Day 1 poolish 300g water 300g flour 3g dry yeast 5g honey * Mix all ingrediens together. * Let sit in room temp for 1 hour then 16-24 hours in the fridge Day 2 400g water 700g flour 30g salt 10g olive oil * Disolve poolish in water * Add flour and mix until all flour is incorporated * Add salt and Knead for 10 minutes * After 2 minutes att 10g of olive oil and continue kneading * Let dough rest for 30 minutes * Slap and fold until dough is smooth * Rest in fridge for 36-48 hours Day 4 * Make 6, 250g dough balls * Rest for 3 hour * Bake your pizza! #pizza #neapolitanpizza #Poolish
