@antonycookes: Miso hake and dashi risotto. When I go to the fish market on Friday lunch breaks, I deliberately don’t have a plan for what I want to cook. I prefer the fresh produce to guide me, which is how good restaurants work too – wow this sounds pretentious but I’ll carry on now I’ve started writing. The journey of turning what I find into a dinner I find no less rewarding than eating it. Here I gave the hake the Nobu black-cod treatment, which then opened up the Japanese culinary vernacular, landing on a dashi stock risotto. It was delicious.
