Pasta alla Norma Recipe: Cut eggplant in bite sized pieces and fry in olive oil. Remove and season with salt. In the same pan, add 1 grated garlic clove and stir. Add passata or peeled san marzano tomato and mix. Cook for 5mins. Add cooked pasta to the sauce and a ladle of pasta water. Mix and cook for another 2mins.
