This is your sign to make these loaded baked potatoes for dinner😍 Save this for later🙂↕️😋 Cheesy loaded baked potatoes with mushrooms🥔🍄🟫🧀🧈 Ingredients: • 6 medium potatoes • Olive oil • Salt & black pepper • Vegan butter Mushroom filling: • 24 oz mushrooms (680 g) • 1 onion • 4 garlic cloves • 4 sun-dried tomatoes • Olive oil - 2 tbsp • Soy sauce or tamari - 1 tbsp • Smoked paprika - 1/2 tsp • Fresh thyme & rosemary • Salt & black pepper to taste Cheese sauce: • Unsweetened plant milk - 1 cup (250 ml) • Starch - 2 tsp • Olive oil - 1 tbsp • Nutritional yeast - 3 tbsp • Garlic powder - 1 tsp • Smoked paprika - 1/2 tsp • Vegan mozzarella-style cheese - 1 cup (100-120 g) • Salt to taste How to make: Bake the potatoes with olive oil, salt, and black pepper at 350°F (180°C) until fully cooked and soft inside. Cut a cross on top of each potato and gently open them up. Add a small piece of vegan butter, season with salt and black pepper, and mash lightly with a fork. For the mushroom filling, cook the mushrooms until all the liquid evaporates and they start to brown. Add olive oil, thinly sliced onion, and minced garlic. Cook until golden, then add finely chopped sun-dried tomatoes, fresh herbs, smoked paprika, soy sauce, salt, and black pepper. For the cheese sauce, heat the plant milk and whisk in starch, olive oil, nutritional yeast, garlic powder, smoked paprika, vegan cheese, and salt until smooth and creamy. Fill the potatoes with the mushroom mixture, pour the cheese sauce over the top, and bake at 375°F (190°C) for another 15 minutes.
