Stuffed Peppers 🫑 Packed full of flavor, and ready to serve in under 30 minutes.  Ingredients  - 4 large bell peppers - 2 tbsp olive oil - 1 yellow onion, diced - 2 tomatoes, diced - 4 cloves garlic, minced - 2 heaped tbsps coriander stems, finely chopped - 1/4 cup of coriander leaves, coarsely chopped  - Salt and freshly ground black pepper - 450 grams lean ground beef - 1 cup chicken broth - 1 tbsp tomato paste - 1 tbsp red pepper paste - 1 tsp chili powder - 1 tsp cumin powder - 2 tsps fresh thyme - 1 cup shredded cheddar - 3/4 cup rice Method - Cut the top 1/2 inch off each pepper. Scoop out the seeds and membranes. Set the hollowed-out peppers and tops aside. - Set a 6-quart Instant Pot® to sauté on high. Add olive oil and when hot, add the onion, garlic, salt (to taste) and black pepper. Cook, stirring occasionally, for about 4 mins.  - Stir in pepper paste and tomato paste, and cook for a 2 mins. Add the ground beef, then cook, breaking up the meat with a wooden spoon into small pieces, until no longer pink, about 4 mins more.  - Stir in the diced tomato, chicken broth, chili powder, cumin, thyme, salt (to taste) and black pepper. Cook, stirring occasionally, until the tomato starts to break down and the mixture becomes thick and saucy, about 3 to 4 mins.  - Stir in the cheddar and the rice until cheese is melted and rice is combined. Taste and adjust the seasoning with salt and black pepper.  - Turn off the sauté function, then spoon the filling into the reserved bell peppers (some will be left over in the pot).  - Add 3/4 cup water and stir to combine with remaining filling. Add the stuffed bell peppers (they should fit snuggly). Cover with their tops.  - Set to pressure cook on high for 5 minutes. Release steam, unlock and remove the lid.
