We freeze our dough and have never had any sticky issues. When we put hot cakes into mixer, we don’t go too long. We stop just before it’s “just right”. Then we freeze and then we just have to knead unfrozen dough a little more.

Maybe try leaving it out on the counter for a couple hours before cutting them! This will help evaporate out the extra moisture collected from freezing! I do this when I freeze & thaw already baked cookies!

When you freeze it I think you should place it in the refrigerator for 24hrs before you bring out to room temperature.
