union bridge carpenter here..sooo this is kinda misleading. there's a lot of things they check for, like too much air ( usually btwn 4-8 ,% of the project specs, too much water,( ration usually can't exceed .50-.60 or specs for project) or not enough water. just depends on the specifications called for in the plans. there are different classes of concrete. class h,k,b c,d and a, here in WV in ohio it's usually s,a and c) different states call for different classes because the weather and soil conditions vary. .each class has different requirements depending on the slump. all they really do is usa a cone that is 12 inches tall, and I think 8in in diameter scoop concrete into it, and then remove the cone. then they measure the difference in how much it fell ( or slumped) ex if you measure the difference and the concrete falls 4 in, then you have a slump of 4. if it has a fall of 6 in then the slum is 6.
depending of what your pouring you may want your concrete closer to a 6 or even 7 do it flows easier around rebar and you don't have to work it as much, or you may want it as low as a 2 or a 2 for walls if you are slip forming,or want to pull the forms to run the walls after you pour them , which most finishers prefer to do.
