This shop serves ramen with beef bone and clam broth. This time, I had their most popular Tokusei gyu-kai chintan shoyu soba. The soup uses Japanese beef bones, whole chicken, and chicken bones, cooked for about 10 hours, then blended with several kinds of clam broth, vegetables, and fruit. It also uses dark soy sauce, homemade aromatic oil, and beef-chicken oil from the soup. The noodles are thin straight noodles from Kanno Seimen, with a firm bite. Toppings include two kinds of chashu, bamboo shoots, seasoned egg, and kaiware. The chashu is cooked at low temperature for a soft finish.
