Harvest carrot seeds in their second year (summer to fall) when the flower umbels (clusters) turn brown, dry, and crispy, usually 4–6 weeks after flowering. The seeds are ready when they are dark, dry, and easily fall off the head when rubbed, often curling inward to resemble a bird's nest

If you’ve had weird weather where it switches from cold to warm and back to cold and back to warm, it can make the plant think it’s been through multiple seasons and go to seed early
