Kind of reminds me of applying colors in vector graphics to save memory. Though, given how your UV can be twisted however you like on the texture, I'd dub this method Rastered Tie-Dye.

This is cool but is it really worth it? textures use no space nowadays, texture sizes were a big issue in 64bit and CD rom era. The current problem in game development is rendering. this also locks you into using flat colors and gradients
