Add chicken thighs + drumsticks, fully submerge, cover, and refrigerate overnight (minimum 2 hours). Blackened Ranch Mix mayo, sour cream, and buttermilk with garlic, lemon, honey, herbs, and a blend of smoked paprika, oregano, thyme, garlic powder, and white pepper. Season with salt, pepper, cayenne, and hot sauce to taste. Bread the Chicken (Double Dredge) Combine flour, cornstarch, and baking powder with the same seasonings from the marinade. Mix in a little marinade to create craggly bits. Remove chicken from marinade (don’t pat dry), dredge in flour → marinade → flour (press & squeeze to fully coat). Fry Heat oil to 350°F. Fry until golden, CWISPY, and cooked to 165°F internal (thighs for 6-8 mins, drumsticks for 10-12 mins). Drain on a rack and hit with a little extra seasoning while hot.
