It has two distinct textures: the white turns into a translucent dark jelly, while the yolk becomes a dense, creamy delicacy with a rich flavor. Once a method for long-term storage, it's now a gourmet ingredient used in salads, cold appetizers, and even congee. 3. Seafood & Shellfish (Hǎixiān) In Guangzhou, seafood cuisine stands apart. Cooking methods here differ greatly from European styles: emphasis on freshness, quick techniques, and vibrant sauces. They use so much garlic that even a vampire wouldn't dare approach the table 😂, but this is what creates that iconic Southern Chinese aroma. I always try as many local flavors as I can in every country. I'm just as comfortable dining at a Michelin-starred restaurant as I am snacking on street-food crickets an hour later.
