Not sure what to do with all of those frozen tomatoes from 2025?! Harvest time is right around the corner, so we need to use them up quick to make room for the next round! This is my tried and true “frozen” tomato soup recipe. I’ve been perfecting it over the years and it’s seriously SO easy to make. No peeling. No seeding. No chopping. Literally just thaw the tomatoes, dump them in as-is, and you’re on your way. Ingredients: -1 gallon ziplock bag stuffed full of halved frozen tomatoes (4.5-5lbs) -1/2 stick butter -1 large onion, chopped -4 garlic cloves, minced -3 Tbsp flour (I use GF flour that I mill myself) -2 Tbsp dried basil -1.5 tsp sea salt -1/4 tsp black pepper -2 cups chicken bone broth -For garnish: heavy cream, grated parmesan cheese, cayenne powder, parsley 1) Thaw tomatoes (save the watery juice!) 2) Melt butter in a large pot on medium heat 3) Add onion and sautee until softed, then add the garlic for 1 more minute 4) Sprinkle in the flour, sugar, basil, sea salt, and black pepper. Let cook for another 2 minutes, stirring frequently. 5) Add the chicken broth and tomatoes (along with the watery juice) 6) Bring up to a boil, then reduce heat to low and simmer for 20 minutes 7) Blend well using an immersion blender, then assess the consistency. If too thin, let it simmer for another 5-10 minutes. If too thick, add some water or more bone broth. 8) Taste and adjust the salt/seasonings, if desired 9) Ladle into a bowl and top with garnishes, if desired. This is delicious with a fresh salad, grilled cheese, or some walnut crusted chicken fingers - YUM! Enjoy!✨ #tomatosoup #tomatorecipe #growtomatoes #cookingfromscratch
